Baked Kale Chips

I’ve been eating a lot of potato chips lately, and while carrots are a good replacement for the crunch, I still want something salty! When I saw this recipe, I was anxious to try it even though I don’t think I’ve ever had kale before (maybe just in soup).

I was skeptical until it started smelling really good halfway through the baking time… then when they were finished, I popped one in my mouth, and delicious! You don’t need too much salt or oil to make it yummy.

Baked Kale Chips
Adapted from Smitten Kitchen.

1 bunch (about 6 ounces) kale
1 tablespoon olive oil
Sea salt, to taste

Preheat oven to 300°F. Rinse and dry the kale, then remove the stems and tough center ribs. Cut into large pieces, toss with a small amount of olive oil in a bowl then sprinkle with a little salt. Arrange leaves in a single layer on a large baking sheet. Bake for 20 minutes, or until crisp. Place baking sheet on a rack to cool. Best when eaten warm.

I tried making these too though I think I got a little salt-happy. They were surprisingly good — buuuut, I’m not a healthful eater enough to really replace my good ol’ kettle chips with these!

This looks so delish! I’m trying it out soon for a dinner party I’m having. I’ve never eaten Kale but this is a great way to get some more greens in my diet.

@ Teresa – My first batch was too salty and my second wasn’t salty enough. Even though they were both good, hopefully my next batch will be just right! I love potato chips too, but with Spring, I always find it easier to turn to veggies and fruit. At least for a little while : )

@ Sabera – I really want to serve it as an app at a dinner party too – I think it’d be so fun and different. Let me know how it goes!
